Skinny{er} Pork Burritos with Green Sauce

This recipe came from my sister in law.
It is highly addictive!
My husband, who hates Mexican food, even Cafe Rio {Gasp!}, had seconds!
{Could be made Gluten-Free if eaten as a lettuce wrap!}
.
3-4 lb pork roast
1 can Pepsi {diet works great and lowers calories considerably}
1 Tbsp onion soup mix
Large can green enchilada sauce {Las Palmas brand has 25 calories per 1/4 cup}
1 tsp salt
1/8 tsp pepper
2 tbsp taco seasoning
1 can low sodium black beans, lightly drained
Cilantro, washed and chopped
Cooked brown rice, optional
Whole wheat tortillas
Shredded cheese {i used low fat mozzarella}
Low fat sour cream {plain Greek yogurt works great!}
.
Put roast in crockpot with 1 can Pepsi and 1Tbs. onion soup mix. Cook on high till done and easy to shred, about 4-6 hours.
Remove most liquid from crockpot and shred pork.
Add 1 cup of green chili enchilada sauce, salt, pepper, taco seasoning and black beans.
Mix together and cook for 30 minutes longer.
Add cilantro and make in to burritos using cooked rice, shredded cheese, sour cream, extra enchilada sauce, or anything else you like!

Mexican Rice

I got this recipe from Mel's Kitchen Cafe and I can not wait to try it... although I'm sure my husband can.  He is growing weary of Mexican food!  Keeps teasing me that this baby is going to pop out Mexican!  If you try it, let me know what you thought of it!
1 cup of long grain white rice
2 cups of low-sodium chicken broth
1 tablespoon of olive oil
1 small yellow onion, diced
4 cloves of garlic, finely minced
1/4 cup of tomato paste
Juice of 1 lime
1/2 cup of freshly chopped cilantro
2 teaspoons cumin
Salt to taste

.
In a medium-sized pot, add rice and chicken broth.
Bring to a boil over high heat.
Stir.
Cover the pot, lower the heat to low and simmer for 17-20 minutes.
Remove from heat and keep the pot covered for 5 more minutes.
.
While the rice is cooking, heat the olive oil in a large nonstick skillet over medium heat.
Cook the onions in the hot oil for 10 minutes, until translucent and starting to brown.
Add the garlic to the skillet and cook for one minute, stirring constantly.
Stir in the tomato paste and cumin and cook for another minute or two.
Mix in hot, cooked rice, lime juice and cilantro.
Mix until well combined.
Season to taste with salt.

Porcupine Meat Balls

This is one of my favorite meals as a child. They are delicious and take no time at all when using a pressure cooker. (If you don't have a pressure cooker, you need to invest!)

1 ½ lb. ground beef
3/4 C. regular rice
2 T. finely chopped onion
½ t. basil leaves (finely pulverized between hands)
salt and pepper to taste
2 - 10 oz. can tomato soup

Put tomato soup in pressure sauce pan. Mix all other ingredients in a bowl and form into
meat balls. Put in soup in pan. Close cover securely. Cook 10 minutes at pressure. Let pressure
drop of own accord. Serve with buttered peas and grated cheese to put atop meat balls.

(You can also cook this in a Lrg. pot but it takes much longer to cook.)

Poppy Seed Chicken

I have tried several variations of this recipe.
This one is my favorite.
It is creamy and good!
There is something about the rice being mixed with the sauce that appeals to my taste better than the recipes that do it separately.
1 1/3 cups rice
1 cup chicken broth
1 can cream chicken soup
1 can cream mushroom soup
1 cup sour cream
1/3 cup chopped onion
2 Tbsp. poppy seed
4 chicken breasts, cut into bit sized pieces
1 cup grated cheddar cheese
1 pkg. Ritz crackers, crushed

Put rice in the bottom of a 9X13 dish. Mix chicken broth, cream chicken soup, cream mushroom soup, sour cream, chopped onion, poppy seed, and chicken together in a large bowl. Pour over rice, mix well. Top with grated cheese, then crushed Ritz crackers. Melt marg, drizzle over crackers. Cook in oven at 350*F. 35-45 min. or until chicken is cooked. Serve with steamed broccoli and a green salad.
