Porcupine Meat Balls

This is one of my favorite meals as a child. They are delicious and take no time at all when using a pressure cooker. (If you don't have a pressure cooker, you need to invest!)


1 ½ lb. ground beef
3/4 C. regular rice
2 T. finely chopped onion
½ t. basil leaves (finely pulverized between hands)
salt and pepper to taste
2 - 10 oz. can tomato soup

Put tomato soup in pressure sauce pan. Mix all other ingredients in a bowl and form into
meat balls. Put in soup in pan. Close cover securely. Cook 10 minutes at pressure. Let pressure
drop of own accord. Serve with buttered peas and grated cheese to put atop meat balls.

(You can also cook this in a Lrg. pot but it takes much longer to cook.)

OH MY GOSH!! This is so cool that you're doing this! I LOVE that you put pictures in too. You really need to make all of these dishes and take pictures of them to put on your blog. WAY cool! In fact if I make any of these I will help you take the pictures to add. Keep this up it's awesome!!
