Easy Bean Dip

3 cans kidney beans, drained and rinsed
1 white onion, diced small {purple onion can be used}
1 medium green pepper, diced small
1 large can of diced tomatoes with green chilies {I used Ro Tel} {6 fresh tomatoes may be used}
7-8 oz Catalina dressing
.
Mix all prepared ingredients in a medium size serving bowl.
Serve with tortilla chips

Chipotle Corn Dip

This looks and sounds so yummy! 
I am definitely trying this soon!

2 cups shredded cheddar cheese
1 cup shredded mozzarella Jack
2 tbsp chipotle peppers in adobo sauce, diced small
1 4 oz can diced green chilies, undrained
1/2 cup Mayo
1/4 tsp garlic powder
1 can of corn, drained
1 small tomato
2 tbsp cilantro, chopped
2 tbsp green onions, sliced thin
.
Preheat oven to 350 degrees.
Mix the cheeses, chipotle peppers, green chilies, mayo, garlic powder and corn together.
Pour into an oven safe dish.
Bake 20 minutes or until golden brown and bubbly.
Top with diced tomatoes, green onions, and cilantro.
Serve immediately with tortilla chips.

Marshmallow S'mores

I have really been liking S'mores lately and came up with this yummy little treat last night!  They were so yummy!  Luckily we had lots of family in town so I only had to eat a few!  Eating all of them would be REALLY bad!
{This could be a really fun easy thing to send around at Christmas time for neighbor treats!  You could also dip them in caramel and then roll them in rice crispies or chopped nuts or pretzels!  Toffee bits would be delicious too!  Have fun with it!}
1-1/2 bags milk chocolate chips
1/2 cube butter
1/4 cup evaporated milk
1 bag lrg. marshmallows
2 packages graham crackers
toothpicks
.
Crush graham crackers with a food processor or blender.
Pour into a shallow dish.
Set aside.
.
In a double boiler, melt butter and chocolate chips together. {I don't have a double boiler so I just put the butter and chocolate in my smallest pot and stuck the small pot on top of a little bit bigger pot that had water in it.  It worked perfectly.}
Stir in evaporated milk.
Keep melted chocolate in double boiler above hot water, but remove from heat.

Poke a tooth pick into one marshmallow and dip into chocolate, coating all sided except for the top.
Roll into graham crackers crumbs, making sure that all the chocolate is covered.
Place on a cookie sheet and repeat until all marshmallows are done.

Scratch Onion Dip

I haven't tried this yet but told a friend I would try and find a good onion dip recipe for her to try. 
I have heard good things about this one. 
If you try it, let me know how it goes!
Sound like a good one to me!
1 tbsp oil
1 tbsp butter
2 onions, chopped
2 cloves garlic, minced
1 tsp beef base or 1 cube beef bouillon
1/2 cup water
2 tsp Worcestershire Sauce
salt and pepper, to taste
16 oz sour cream
4 oz cream cheese, softened
.
Heat
butter and oil in a medium saucepan over medium-low heat.

Cook onions and garlic on med-low heat until soft and browned.
{You want them caramelized but not burn - this takes a while, 20-30 minutes.
Add beef base or bouillon and water and continue to cook until mixture is combined.
Season with Worcestershire sauce and salt and pepper to taste.

Combine
sour cream, cream cheese, and onion mixture.

Chill dip at least 30 minutes or up to several days.
Taste and adjust seasonings as desired before serving.

Chicken Quesadilla's

12 Tortilla's any size
1/2 lb cooked chicken, shredded or cut up into bit size pieces {I like to use rotisserie chickens, they are so easy!}
1 small can green enchilada sauce
Hot sauce or salsa
Shredded cheese
Sour cream
.
Spray a large pan with cooking spray and heat on medium - medium high heat.
Place tortilla on hot pan and sprinkle with desired amount of cheese.
Place a single portion of chicken in a small bowl and add enough enchilada sauce to moisten, and a few dashes of hot sauce or a bit of salsa.
Mix together and spread over cheese.
Top with another tortilla and flip and cook until tortilla starts to brown.

Serve with sour cream for dipping.
{If you like spice, you can also add nacho jalapenos to the chicken mixture.}

Chocolate Chip Cheeseball


12 ounces cream cheese, softened at room temp.
1/2 tsp. vanilla
1/2 cup powdered sugar
1/4 cup light brown sugar
3/4 cup mini chocolate chips
1 cup crushed chocolate cookies, for rolling }teddy grahams or Oreos. Or you could just use crushed graham crackers, any flavor. {This is optional. You do not have to roll.}
Cookies, nilla wafers, pretzels, or apples for dipping.

In a medium bowl, mix cream cheese, vanilla, powdered sugar and brown sugar until well mixed.
Stir in chocolate chips.
Cover bowl with plastic wrap and refrigerate for 1-2 hours if rolling. {If you are not rolling, spoon into serving bowl and cover with plastic wrap until ready to serve.}

Place the crushed cookies on a shallow pie plate.
Using lightly greased hands, mold the cream cheese mixture into a ball.
Place the ball onto the crushed cookies and roll around so that the ball is covered.
Gently pick up the covered ball and press lightly, so that the crumbs are pressed into it.
.
Place the finished cheese ball into a small serving dish and cover with plastic wrap until ready to serve.
Serve with cookies, nilla wafers, ect.

Spinach & Artichoke Wantons

To Die For...



9 oz. frozen spinach, thawed and drained

14 oz. of water packed artichoke hearts, drained and chopped

1/2 cup Alfredo sauce

1/2 cup mayo

3/4 tsp. garlic salt

1/4 tsp. pepper

1 cup Parmesan cheese

wanton wrappers

.

Mix all ingredients in a medium mixing bowl.
Spoon 1-2 Tbsp. of mixture onto the center of a wanton wrapper.

Seal with water and twist shut.

Deep fry in about 3-4 inches of oil for about 4-5 minutes or until golden brown.

{do not over fry. it will continue to cook even after taken out of oil}

Crock Pot Spinach & Artichoke Dip

This is a great staple at any Christmas party...

9 oz. frozen spinach, thawed and drained

Chicken Egg Rolls


1 LB ground chicken {you can ask the meat department to grind it for you or you can cook it at home and then put it in the blender.}
2 cups Cole slaw mix
2 tsp grated ginger {1 tsp ground ginger}
1 tsp sesame oil
1 tsp soy sauce
1 tsp minced garlic
1/4 tsp pepper
1 egg white
1 package round wanton wrappers
4 tsp soy sauce
{you can also add celery, bean sprouts, mushrooms, or onion. dice very small}
.
Mix
all ingredients except wanton skins, broth and soy sauce.
Brush each wanton wrapper with water.
.
Place desired amount of chicken mixture down the center of the wanton wrapper.
Fold the tops in.
Fold one side over and then roll shut.
Repeat with remaining skins and chicken mixture.
.
Gently fry filled wantons 3 or 4 at a time for about 3-4 minutes or until golden brown.
Remove with a large slotted spoon and place on a plate with paper towels.

Crab Rangoon

I am craving cream cheese wantons so bad right now...

16 ounces cream cheese, softened
4-5 green onions, thinly sliced
1 teaspoon soy sauce
1-6 oz. can crabmeat, drained and flaked
1 garlic clove, minced
2 teaspoons Worcestershire sauce
1 {48 count} package wonton skins
¼ cup melted butter

{Lightly:}
spray a cookie sheet with non stick cooking spray.

{Mix:}
the cream cheese, onions, soy sauce, garlic, and Worcestershire sauce in a medium bowl.
Gently fold in the crabmeat.

{Take:}
the wonton skins and place 1 teaspoon of the crab mix into the center of each wonton. Moisten the edges of the wonton with water.
Fold the wontons in half to form a triangle, and press the edges to seal.
Next, pull the corners together and press to seal.
{Check the package for an example of how the crab rangoons should look.}

{Arrange:}
on a cookie sheet and brush them with the melted butter.

{Bake:}
in the oven at 425ยบ for 12-15 minutes, or until they turn a golden brown color.

Cream Cheese Wontons


4 ounces cream cheese, softened
1/3 cup chopped green onions
1/4 teaspoon ground ginger
salt
12-15 wonton wrappers
water for sealing
oil for frying

In a bowl combine cream cheese, green onions and ginger.
Season to taste with salt.

{To assemble bites:}
Lay one wonton wrapper on a flat surface.
Spoon one teaspoon of mixture into the center of the wrapper.
Dip your finger in the water and run along the edges.
Bring all sides together in the center, pinch just above the filling to enclose filling.
Carefully twist to close.
Repeat with remaining filling and wrappers.

{Heat:}
2 inches of oil in a pan over medium-high heat.
Once oil starts to shimmer, drip a small piece of a wonton wrapper in the oil, if it sizzles its ready.
Working in batches so you don’t over crowd the pan, fry bites until golden brown, 2-3 minutes.
Using a slotted spoon, transfer to a paper towel lined plate.
Allow to cool for several minutes before serving.

Fiesta Cheese Dip

1 lb Velveeta Cheese
12 ounces cream cheese
1 can ro-tel
4 green onions, chopped
1 jalapeno, seeded and chopped
2 fresh garlic cloves, minced
1/2 bunch cilantro, chopped
black pepper to taste

Melt cheeses together in microwave or on stove top.
Stir in all other ingredients.
Serve warm with tortilla chips.
{You can put cheese dip in a crock pot and keep on warm to keep cheese dip from getting sticky.}

Southwest Egg Rolls and Dipping Sauce

These are TO DIE FOR!
You have to try them...

1 pound boneless, skinless chicken breasts
Olive Oil
4 teaspoons taco seasoning, divided
1 cup corn {fresh or frozen}
1/2 cup black beans {from the can, drained and rinsed}
1 small can chopped green chiles
2 Tablespoons Red Pepper chopped {about 1/4 of a red pepper}

8 oz Monterey Jack cheese
Wonton Wrappers {the larger size}
vegetable oil
.
{Fill:} a large pot with about 3 inches of oil. Heat it to about 375 {the oil will drop to 350 once you put the wontons in}
.
{Season:}
chicken with 2 teaspoons of taco seasoning.

Heat olive oil and a skillet and add the chicken.
Cook until no longer pink.

Remove and set aside to cool.
.
{In:} the same skillet that you cooked the chicken in, add the corn, black beans and chiles.
Season them with 2 teaspoons of taco seasoning.
Cook on medium low for about 5 minutes.
Remove from the heat and allow to cool.

.
{FINELY:}
chop the cooled chicken.

Stir the chicken into the cooled vegetable mixture.
Add the cheese and mix everything together.
.
{Take:} 1 wonton wrapper and place it in front of you so it looks like a diamond.
Dip your finger in water and run it around the edges of the wrapper.
Place 1 1/2 tablespoons of mixture in the middle of the wonton.
Take the bottom tip and fold it over the mixture and tuck it around the mixture.
Fold both side in so it resembles an envelope.
Then roll flap around and seal with more water.
Store seam side down until ready to fry.

.
{Carefully:} drop 3 or 4 wontons at a time into hot oil seam side down.
Fry for about 3-4 minutes or until golden brown.
.
{CREAMY AVOCADO DIP}
1 avocado

5 Tablespoons sour cream
1/8 teaspoon cumin
1/8 teaspoon chili powder
Juice of 1/2 small lemon
Salt and Pepper to taste
Mix everything until smooth.
.
{SPICY SOUR CREAM DIP}
1/2 cup sour cream
1 teaspoon taco seasoning
About 4 shakes of hot sauce
Salt and pepper to taste

Mix everything together till smooth.
Store in fridge until ready to serve.

Parmesan Cheese Bread

The first time I ever tired this recipe was at my sister in laws house.
They are TO DIE FOR!...
And so easy.
Next time,
instead of plain old garlic bread,
make this to go with your spaghetti!
2 cups shredded parmesan cheese
1/2 cup mayo
4 green onions, chopped finely
3 cloves garlic, minced
1 loaf baguette bread, sliced 1/2 inch thick on a diagonal
Mix first four ingredients untio well creamed.
Spread desired amount over sliced baguette bread.
Place on cookie sheet.
Broil on low until bubbly and edges are lightly browned.

Guacamole


2-3 ripe avocados
couple spoons of mayonnaise (sour cream works too)
salt and pepper to taste
1 lime, juiced
Combine all ingredients in small bowl.

Chips & Queso

This is a gotta-try recipe.
Really good.

{For the Queso:}
1 can chili, any brand, with or without beans
1-8 oz. cube cream cheese cut into chunks
1 cup salsa
.
Pour chili into a medium sauce pan.
Add chunks of cream cheese and salsa.
Stir on Medium high heat until cream cheese is melted.
Enjoy!

Onion Rings and Dipping Sauce

I LOVE onion rings!
I got this recipe from Rachel Ray.
Please try it...

Inch of vegetable oil poured into a large fry pan.
Turn burner onto medium heat.
.
{Mix together well in a shallow dish:}
1 cup flour
1 tsp. salt
1 tbsp paprika
1/2 tsp dry mustard
1/8 tsp cayenne
.
{In another dish, pour:}
1 can cold evaporated milk
.
{To prepare the onion:}
2 large cold vidalia onions, cut ¼ inch thick
Dip onion in milk, then flour, repeat.
Fry in hot oil till golden brown.
.
{Sauce:}
½ cup Sour cream
½ cup Chili sauce
1 tsp cumin
1/8 tsp. cayenne
mix together in small dish.

Chili Cheese Nachos

There are so many things that you can do with salsa fresca.
(Recipe found under Appetizer's)
Today I was craving nachos and,
LUCKY ME,
I had salsa fresca on hand!

1 big handful tortilla chips (any brand/kind is fine)

1 cup chili

1/4 cup cheese sauce

1/4 cup salsa fresca

Fresh Broccoli Salad


1 bunch of broccoli, broken into small florets
1 C. raisins
1/4 C. chopped purple onion
At serving time add:
6 slices cooked, crumbled bacon
1 C. raw sunflower seeds


Dressing:
1 C. mayonnaise
½ C. sugar
1/4 C. red wine vinegar


Stir all ingredients together in salad bowl and serve.

Salsa Fresca


4 large tomatoes
3-4 green onion, chopped
2 clove garlic, minced
1/2 bunch cilantro, finely chopped
1 jalapeno pepper,finely diced
1 lime, juiced
garlic salt to taste
salt and pepper to taste

Chop tomatoes, onion, garlic and cilantro.
Add finely chopped jalapeno, lime juice and garlic salt, salt and pepper to taste.
Serve with corn chips
(You can also add 1/2 can of black beans and 1 chopped avocado.)
