Lion House Rolls {Rose Shaped}

These rolls are so good.  They are a staple at the Thanksgiving dinner table at the in laws house.  I just love this rose shape for the rolls... plus it's two rolls in one and when pulled apart, perfect for putting jam or honey butter in it!
To learn how to do this pretty rose, click here.

2 cups warm water {110-115 degrees}
2/3 cup nonfat dry milk {instant}
2 Tb. dry yeast
1/4 cup sugar
2 tsp. salt
1/3 cup shortening {butter or margarine}
1 egg
5-5 1/2 cups flour, all purpose {bread flour can be used if you have it on hand}
.
In the large bowl of an electric mixer, combine the water and the milk powder and stir so the milk dissolves.
Add the yeast to this mixture then the sugar, salt, shortening, egg and 2 cups of the flour.
Mix on low speed of mixer until ingredients are wet, then turn to medium speed and mix for 2 minutes.
.
Stop the mixer and add 2 more cups of flour then mix on low speed until the ingredients are wet, then turn mixer on medium speed and mix for 2 minutes.
The dough will be getting stiff and you may need to remove the bowl from the mixer and mix in the remaining flour by hand.
Add approximately 1/2 cup of flour and mix again. {This can be done by hand or mixer}
The dough should be soft, not overly sticky, and not stiff.
{It is not necessary to use the entire amount of flour}
.
Scrape the dough off the sides of the bowl and pour approximately on tablespoon of vegetable oil all around the sides of the bowl.
Turn the dough over in the bowl so it is covered with the oil.
{This helps prevent the dough from drying out.}
Cover with plastic and allow to rise in a warm place until double in size.
Sprinkle a cutting board or counter with flour and put the dough on the flour.
.
It is now ready to roll out and cut into desired shape and size of rolls.
Place on greased {or parchment lined} baking pans.
Let rise in a warm place until the rolls are double in size {approx. 1-1 1/2 hours}.
.
Bake in a 375-degree oven for 15-20 minutes or until they are browned to your satisfaction.
Brush with melted butter while hot.
Yields 2 to 2 1/2 dozen rolls.

Norene's Basic Sweet Dough

This is such a great recipe for cinnamon rolls. I have never tried to make some of the other stuff but my mother makes the cherry and apple loafs at Christmas time to take to the neighbors. They start asking for it at the beginning of every December. It is so good.

(1 ½ times this recipe makes 15 medium Cherry or Apple struddles
It takes 3 cans of Cherry and 3 of Apple pie filling)

1 c. sugar
1t. Salt
3 pkg or 3 T. yeast
8-9 c. flour
2 c. milk, scalded
1 c. margarine
2 eggs

In large bowl combine sugar, salt, yeast, and 2 c. flour. In 2 qt. sauce pan slowly heat milk
and butter until very warm (butter does not need to melt.) With mixer at low speed, gradually beat liquid into dry ingredients. Beat at medium speed 2 minutes more. Beat in eggs and 2 c. flour.
Continue beating 2 minutes more. With spoon, stir in enough additional flour (about 4 ½ c.) To make a soft dough. Turn dough onto lightly floured surface. Knead until smooth and elastic, about 10 minutes. Shape into a ball and put into a large greased bowl. Turn mound of dough to grease top.
Cover and let raise until double, about 1 hour. Punch down dough. Work the dough on lightly floured surface to make whatever kind of sweet bread you desire.

Variations:

Raisin Bread:
Roll 1 ½ batch of sweet dough into a 9X12 inch rectangle. Sprinkle 3/4 c. raisins on top of
dough and roll up jelly roll style. Seal ends.put on greased pan and let raise double 1 - 1 ½ hours.
Bake 25 min. at 350 degrees, or until loaf sounds hollow when tapped. Let cool.

Cherry or Apple Loaf:
Roll dough into a rectangle. Put on a greased cookie sheet. Spread cherry or apple pie filling down the middle. With a knife or pizza cutter cut 3/4 - 1 inch strips crosswise along the side of the filling, cutting from inside to outer edge. Fold strips alternately across mixture. Seal edges and ends.
Cover and let raise double, about an hour. Bake in a 375 degree oven until golden. Cool on a wire rack or cookie sheet. Drizzle with glaze.

Glaze:
½ c. powdered sugar 1/4 t. vanilla 2 t. water
Combine in a small bowl and stir until smooth. Drizzle over pastry for a nice effect!

Cinnamon Rolls:
Roll our dough in a large rectangle. Sprinkle with brown sugar and cinnamon mixture and raisins.
Roll up in a nice roll, sealing edges at the outside edge. Cut into aprox. 1" rolls with a long piece of string. This is easier than using a knife! Place on baking sheets and cover and let raise till double.
Bake at 400 degrees for about 25 minutes or til lightly browned. Cool. Frost when slightly warm.

Braided Bread, Wreaths and Christmas Trees for holidays:
For braid, roll 3 ropes of dough and braid. For tree, roll dough in a triangle. Cut 1" strips from near the center to the outer edge. Twist each strip. Sprinkle with cinnamon sugar. Wreaths are made by forming cinnamon rolls in a ring. Frost with glaze:

Glaze:
2 c. powdered sugar ½ t. vanilla 3 T. water
