Honey-Lime Chicken Enchiladas

1/4 c. honey
1/3 c. lime juice
1 Tbsp. chili powder
2 cloves garlic, minced
3 cups chicken, cooked and shredded
-Combine in small bowl

1 large can green enchilada sauce
1 cup cream
-Combine in small bowl and pour just enough, into a 9X13 baking dish, to coat bottom.

8-10 tortillas
3 cups shredded cheese
1/3 c. cilantro

-Warm tortillas and place some chicken mixture, cheese and cilantro inside.
Roll up.
Continue process until all the chicken is gone.
Arrange in 9X13 baking dish.
Pour remaining sauce mixture over enchiladas and top with cheese.
Bake @ 350 for 30-35 minutes
Serve with fresh salsa and torlilla chips.

Fresh Salsa

6 large tomatoes
2 cloves garlic minced
3 stems green onion, chopped
1 small jalapeno, diced really small
1 bunch cilantro, chopped
2 limes, juiced
1 avacado, peeled and diced {optional}
1/2 can black beans, rinced {optional}
salt to taste
pepper to taste
-Combine all in medium bowl. Enjoy!
