Mexican Grilled Cheese Sandwiches

4 slices Texas Toast {or any other kind of bread you might have on hand}
Butter
2 Tbsp cilantro, chopped finely
Pinch of salt
2 slices Pepper Jack Cheese
1 avocado, sliced thinly
Salsa for dipping

Stir the cilantro, salt and butter together until smooth.
Spread the butter mixture on one side of each slice of bread.
Place the buttered side of two pieces of toast down on a frying pan.
Top with a slice of cheese and a few slices of avocado. 
Top with remaining bread.  
Fry until lightly browned on both sides.
Serves 2.
